Nature as a way of life

More than just organic ingredients: Gitschberg’s organic cuisine offers a wide choice of homemade dishes, sustainable recipes, and healthy freshly prepared foods. As well as the conscious choice to do without, when warranted. Ostentatious buffets are not on the menu, and neither are exotic products and seafood. Vegetarian options are, together with locally sourced fish such as trout, char and others. All our meats and cold cuts are carefully selected and from local suppliers.

As a hotel serving Bioland-rated organic cuisine in South Tyrol, we pride ourselves on sourcing the majority of our ingredients from organic farming, preferably from our own region. But we also offer some non-certified regional specialities, because we know, trust and value the people who produce them and their way of working.

Wild herbs and sophisticated plant-based cuisine. We love to bring the beauty, wisdom and aromatic diversity of nature to the table. Literally. A variety of wild herbs grow abundantly in the meadows around Biohotel Gitschberg, and we grow edible flowers as well as Alpine and Mediterranean herbs in our hotel garden. Wherever you turn, you can bask in a sea of scents and colours, to the delight of the heart and the senses.

In the afternoon, a sweet and savoury South Tyrolean Marende will keep you delighted until the culinary journey reaches its peak with our deluxe green dinner.
